How do we at Baja Burrito do what we do? This video shows how we make some of our authentic Mexican dishes.
In 1992 Colin Saeger married Martha Barrientos, who was born in the State of Guanajuato Mexico, and introduced him to real Mexican food; not just tacos, chips and salsa.
Colin is a chef and has been in the restaurant industry for over 30 years. When Martha introduced him to carnitas, they became his favorite. Unfortunately, the carnitas he tried at other establishments were often dry or very greasy. Colin told Martha that he would come up with a recipe for carnitas to be moist and healthy, and then some day open a Mexican taqueria. Colin’s carnitas have now been Baja Burrito’s trade mark.
He also loved his mother in law’s salsas and Mexican rice. And she was more than happy to share her recipes at the taqueria.
Colin and Martha opened Baja Burrito on June 12th of 2007, and it has been a rewarding as well as exciting learning experience for them and their two children, Keuna (17yrs) and Colin (12yrs).
